Roasted Tomato Salsa

3 pounds/1/5 kilo tomatoes
1 onion
1 garlic bulb
1-2 jalapenos (optional)
Heat oven to 425F/220C. Peel onion and cut in quarters. Wash tomatoes and cut in half. Line baking dish with aluminum foil. Don’t skip this or you will have a mess to clean up. Place onions, tomatoes, whole garlic (don’t peel)and whole jalapenos on baking dish. Place in heated oven for about 45 minutes. Check at 30 minutes. Ingredients should be charred, but not burnt. When done, let cool. Remove stems from jalapeno. Cut the pointy end off garlic bulb and squeeze garlic out. Put all ingredients in a food processor and pulse to desired consistency. Add salt and fresh cilantro to taste.
